What a wonderfully written post! Autumn is also my favorite time of year. Crisp air, crisp apples, colorful leaves, the bluest blue skies with puffy silver clouds, the fall harvest, warm sweaters, and the beginning of using our cozy woodstove!

PS - Ingrid, I keep rejoicing with you at your new radio endeavor. Praise the Lord!!!

P.S. Ingrid. I meant to tell you I loved this post..."The darkness creeps in earlier and earlier in its autumnal encroachment.
As long as we're sharing recipes, here's another simple, but simply scrumptious recipe for Roasted Caramel-Glazed Cinnamon Apples:
Put oven rack in the middle and heat oven to 400 degrees. Place 3Tbl butter in a 13x9 inch baking pan (I find my corningware white French baker, approx. 11 inch round, 1 inch high fits perfectly) and set it in oven to melt butter while preparing apples. Meanwhile halve and seed 4 firm, crisp apples. Sprinkle 1/2 cup brown sugar over melted butter in pan. Arrange 4 cinnamon sticks (about 4 inches each,) halved or mix 2 tsps. ground cinnamon with the brown sugar. Place apples, cut side down over this. Bake until apples are tender, about 25 minutes. Remove pan from oven, turn apples, cut side up, and spoon sauce over apples. Return pan to oven and continue to roast until golden brown, about 5 minutes longer. Remove from oven and let cool slightly. To serve, spoon a half apple into each bowl,(we always spoon two halves into each bowl!) sticking a cinnamon sticke in each core if you didn't use the ground cinnamon. Put a dollop of Greek yogurt (The Greek Gods Honey Yogurt is THE Best!!!) or whipped cream is also yummy. Top with a sprinkling of sliced almonds for a delicious dessert. Really easy and really good. Really! :)

love any apple dessert--apple pie, my mother's apple cake, crisp, cobbler. And, in a pinch, I'll just make baked apples. Nothing easier or better or healthier (I put a little apple juice in the pan and no butter. Just core the apples and fill with a little brown sugar, maybe nuts, maybe raisins, maybe chopped apricots. Cover with foil and bake until tender. Delicious at dessert and a wonderful treat at breakfast.)

I ended up buying a Marie Calendar's dutch apple pie - frozen. My plans were thwarted today in getting to the store for apples this morning and I ran out of time before taxi service to the kids schools started for the afternoon. Oh well, a frozen apple pie still has a very nice aroma! I'll save my "from scratch" efforts for next week.

Supposed to be 45 degrees tonight.
